BBQ Chicken Sauce Recipe

We all love a chicken burger recipe and there are many recipes for BBQ chicken, but often the sauce is more of a problem. A burger has to be done properly. I'm wondering what the statistics are? How many people would prefer the good old beef burger, but everyone has his or her own preference.

Working in the chef industry I have been instructed to make many different sauce recipes and told how to make them for all sorts of occasions and decorate the plate beautifully, drizzling the remainder of the sauce around the plate.

When we think of a BBQ sauce recipes for chicken we are thinking of the flavors and how they go with the chicken fillet. We are not especially thinking how beautiful and pretty the decorations on our plate look. A chicken burger can be very plain without the sauce so in this case some might say the secret is definitely in the sauce

When I mention oyster sauce not a lot of people know about this, which I find a little strange. You can find oyster sauce at any chinese store, but you should find it at the supermarket. However you can't use oyster sauce alone on your chicken burger. Oyster sauce has a very sharp taste, but mixed with some honey it will calm it down and you will experience a delicious BBQ sauce.

Once you have that base you can experiment a little yourself, adding some chili or garlic to spice it up. It's also great with tomato sauce. Tomato, honey and oyster sauce should be equal in quantity and then you will be on your way to one of the best bbq sauce recipes.

A Delicious BBQ Chicken Fajita Recipe to Enjoy This Summer

With the hot weather now creeping in, or for those of you lucky enough to see all year-round sun, it's a perfect time to get outside in the garden and fire up your barbeque!

For this fajita recipe, you will need:

1/2 cup of BBQ sauce
1/2 cup lime juice
2 teaspoons olive oil or vegetable oil
2 cloves garlic, finely chopped
1/2 teaspoons of crushed red pepper flakes
3/4lb boneless skinless chicken breast
4 flour tortillas

This fajita recipe will serve four people.

Directions to make BBQ Chicken Fajita Recipe:

Finely chop and fry the garlic for 2 minutes before mixing in the lime juice and BBQ sauce

Place the mixture in a bowl and add the chicken breasts, mixing around until covered. Allow to marinate overnight for best flavour.

Pre-heat the BBQ making sure the coals are glowing red. Brush the BBQ grill with olive oil and place the chicken on the BBQ

Cook the chicken for approximately 7-10 minutes, making sure the meat is completely white inside.

Whilst the chicken is cooking, chop up the red pepper into rings and place on the BBQ for the last 4 minutes, flipping them halfway.

Using sharp knife, cut the chicken diagonally into thin slices. Remove the peppers and cut all rings in half.

Wrap in warm tortilla along with a sprinkle of pepper flakes. Add salad and garnish as desired and enjoy this BBQ chicken fajita recipe!

I recommend a  refreshing, crisp green salad to enjoy with this meal. A simple salad I tend to make really quickly is baby rocket, watercress, cucumber, a drizzle of olive oil and a sprinkle of crushed rock sea salt. The peppery taste of the rocket and watercress compliments the sweetness of the BBQ sauce marinade.

Create Your Own BBQ Rub Recipe

BBQ Rub Recipe

A BBQ Rub recipe is fundamental to making great BBQ. Do not be intimidated by all the ingredients and how they should be mixed. Below is a brief overview of the core spices to a good bbq dry rub. Feel free to try this basic recipe and experiment with combinations of these spices and more.

Core Spices

Paprika

The spice by volume most used as a good base for barbecue rubs is paprika. Paprika is made from sweet red peppers that are dried and then powdered. Most paprika originates from Hungary but now you can get some great paprika from Spain. The author prefers 'sweet Hungarian paprika' when making his own rub. Paprika is responsible for giving barbecue its beautiful red color.

Chili Powder

Chili powder is a spice mix usually made from chili peppers (red, ancho, chipotle and cayenne). Often mixes will include other spices such as black pepper, coriander, turmeric, mace and others.

Salt

Salt is in everything right? Go easy because you can easily add too much salt to a rub. Smaller cuts are very suspect to oversalting, such as ribs or chicken. Also, be careful with rubs that are high in salt content if you plan to let the rub cover the meat for long periods of time. High salt rubs can turn the meat 'hammy' if allowed to blend with the meat too long. I prefer to use kosher salt (or sea salt) with my rubs, but you may need to run it through a spice grinder if your other ingredients are finely ground.

Brown Sugar

Brown sugar is often a hig percentage of the bulk of rib rubs, but is common in many all-purpose rubs. It may be necessary to dry out brown sugar to avoid clumping if you are planning to store the rub for some time. Also, be careful with rubs high in sugar because it can easily burn.

Garlic Powder,Onion Powder,Black Pepper

Important ingredients present in almost all barbecue dry rubs.

Secondary Spices

The following spices are also common in barbecue rubs and often commercial rubs will include some or all of these spices.

Coriander

This is another great spice that has an identity crisis. Most of the world refers to it as coriander, but in America it is called cilantro, yet, it is also referred to as Mexican parsley, as well as Chinese parsley. Whatever you want to call it, add it to your barbecue rub. But,make sure to use ground (dried) coriander. Cilantro leaves have their purpose, but its sweet, citrus like taste of the leaves is better left for other dishes. This is another spice often used in Asian, Indian and Mexican dishes.

Cumin

Cumin is a bit more obscure than most of the ingredients found in barbecue rubs, but one that I use in all of mine. Cumin is in the parsley family and has a great aroma. If you have eaten Indian or Persian food, you have had an abundance of this spice. This is a core spice for many Mexican and in nearly all Tex-Mex dishes. I love this spice and often have to hold back to keep from putting too much in my rubs. A little known fact is that cumin is the 2nd most used spice in the world (to black pepper).

Cayenne Pepper

Take it easy with this one unless you like your rub with some kick. Too much kick is possible even for those who dig very spicy rubs. I made the mistake of using fresh ground cayenne for the first time at a barbecue competition...and the judges must have thought it was a hot buffalo wing eating contest. I enjoyed the ribs, but the judges scored me VERY low on taste.

How to Mix

Basically, mix your ingredients together and put on your favorite cut of meat and cook to your pleasure.

A few hints. Keep in mind that ribs have a small surface area, so a little rub goes a long way. Just the opposite effect with an eight pound Boston Butt or 12 pound beef brisket. With the bigger cuts, more rub is better. Also, sweeter rubs seem to do better with ribs and chicken and less sweet for bigger cuts (they cook longer and could burn with high sugar content).

Here is a great rub base for starting your own rub. Feel free to experiment.

Basic BBQ Rub Recipe

5 parts Paprika

3 parts Chli Powder

3 parts Brown Sugar

2 parts Kosher Salt

1 part each Black Pepper,Onion Powder, Cayenne Pepper

Part can be any measurement - cup, tablespoon, teaspoon

Happy Barbecueing.

BBQ Chicken Recipe - BBQ Chicken With an Orange Glaze

This tasty BBQ chicken recipe benefits from having a clean citrus edge and sweetness to round up the flavours in this dish. The orange juice may be substituted with apple if you prefer.

Ingredients:

6 chicken fillets, trimmed

1/2 litre orange juice

3 tbls tomato ketchup or passata (concentrated sieved tomatoes)

2 tbls demerera sugar

1 tsp dried thyme

1/4 tsp Tabasco sauce or your favourite pepper sauce

1 tbls cider vinegar

Directions:

In medium or large sized saucepan add the orange juice, tomato, demerera sugar, cider vinegar, herbs and pepper sauce and bring to a rolling boil. Lower the temperature to a gentle simmer and stir gently and constantly until the sugar has completely dissolved.

Divide the sauce mixture into half and allow it to cool. Place 1/2 sauce in a plastic or glass container and place in your fridge and place the remaining half of the sauce and in an oven-proof dish. At this stage you can now add the prepared chicken breasts to a baking dish and mix it thoroughly with the sauce.

Cover the chicken and sauce mixture, and refrigerate it for at least 4 hours, overnight is preferable for the best flavour.

Now turn on your grill to around 150f and add a little oil to the grill rack to prevent the chicken from sticking.

Remove chicken from refrigerator and add a light spray of oil to the chicken pieces and generously coat them with the marinade. Place the chicken on the grill and cook for 10 or so minutes on each side until it the chicken has cooked through properly, and test to make sure that the juices run clear.

Continue to coat the chicken with the remaining marinade during cooking being careful not to add too much. Once the chicken has cooked through with the sauce, it will have a shiny fruit glaze and will be ready to serve.

BBQ chicken is arguably one of the most popular BBQ foods, and you can view many more tempting BBQ chicken recipes at Barbecue Party, the number one stop for BBQ information, recipes, hints and tips.

Atlanta BBQ Sauce Recipe - Recipes From The Best BBQ Caterers In Atlanta

Atlanta GA offers some of the best BBQ and has some of the best BBQ restaurants in the country. Atlanta BBQ sauces differ from some of its neighboring states. Most BBQ sauces have a few things in common. The main ingredients are tomatoes or ketchup, spices, something sweet like sugar or molasses and sometimes vinegar. Most of the BBQ sauces that I have tried in the Atlanta area has a strong tomato base. I think most of the BBQ restaurants use either tomato ketchup or sauce.

One of my favorite Atlanta BBQ sauce recipes is as follows:

Two table spoons of butter

One half of an onion chopped fine

One and one half cups of tomato sauce

One cup of cider vinegar

One teaspoon of liquid smoke (You can find this in most grocery stores)

One quarter cup of brown sugar

One teaspoon of salt

One teaspoon of fine black pepper

Cayenne pepper to taste (Maybe about 1 teaspoon)

One table spoon of yellow mustard

You will need to melt the butter in a sauce pan and then brown the onions until soft. Add the other ingredients and simmer for twenty minutes.

If you want a hotter sauce then just add more cayenne pepper but be careful. Keep in mind that the sauce will seem spicy when it is warm. Once the sauce cools it will not taste as spicy. The liquid smoke adds a unique twist but be careful because using too much will ruin the batch of sauce.

I love BBQ and this sauce is one of my favorites. Give it a try at your next barbeque.

Cooking the Best BBQ Ribs Recipe

Every BBQ ribs recipe comes in different ways of preparations and cooking styles. What is most important in each BBQ ribs recipe is that the meat should be tender and flavourful. It could take as short as 20 minutes to cook a BBQ ribs recipe, but some would opt for the more complicated recipe. It is to be noted that it is not recommended for BBQ items to be placed directly on its heat source or if need be, it has to be closely monitored to prevent burning and to maintain its good appearance.

One good ribs recipe is using around 8 beef backribs marinated in half cup of honey and ketchup. Combined with it chopped onions and about 4 minced garlic and ? ounce of green chillies that are diced is an option if the preferred taste is hot and spicy. Some dry ingredients like salt, dry mustard, black pepper, cayenne and salt are also needed to enhance the flavor of the marinade or it could directly be rubbed into the ribs. If there are excess fats in the meat, it should be trimmed or removed.

The oven should be preheated prior to the grilling. The ribs should be placed in a drip pan at times. The lid of the pan should be closed so that the heat does not escape. Cooking time is about 3 to 31/2 hours over medium to low heat. The temperature should not go over 265 degrees F.

The sauce for this BBQ ribs recipe uses ketchup, chilli peppers, mustard, onion, garlic and honey. These should be mixed in a sauce pan. Combine the ingredients over low heat until the mixture is evenly warm. When grilling of the ribs is done, pour the mixture into it. It is better if the mixture is thick so that the insides of the meat can be penetrated.

Just about every BBQ ribs recipe can be summarized in steps 1-5. Any person who follows these procedures will be able to make a very good BBQ ribs recipe.

First step of the BBQ ribs recipe is to defrost the ribs about 4 hours prior to serving. Then add the desired seasoning and spices and coat the ribs with a good amount of barbeque sauce.

Step 2 is to cover the ribs securely in aluminium foil to seal the flavouring.

Step 3 in the BBQ ribs recipe is to put the wrapped ribs in a preheated oven for 3 hours at 200 degrees F for slow cooking to ensure the meat to really be cooked tenderly without destroying the outside part of the ribs.

The step 4 of the BBQ ribs recipe is to remove the foil and coat generously both sides with a preferred barbeque sauce.

Finally, step 5 is to put the ribs on a barbeque grill to finish up the cooking which is to brown the outsides of the ribs and should just be a quick grilling. Now all you have to do is enjoy your creation.

Best BBQ Sauce Recipe? No Such Thing

Picking out the best BBQ sauce recipe is like trying to decide which of your children you love the most. It's just not that cut and dried.

If you are looking for the best BBQ sauce, you will find it wherever you go. In other words, if you go to Memphis and ask what is the best BBQ sauce, most of the people there will tell you a Memphis style sauce. It's like Clint Black's song says, "wherever you go, there you are". Without getting into all the history and background, let's just say that BBQ sauce varies by region of the country. If anything is agreed upon in the world of BBQ, it's that BBQ sauce is different depending on where you go.

So, you now have to decide for yourself which recipe is the best. Because... no one else knows. Most people have their own choice of what's the best BBQ sauce, but nobody can agree. There are too many of them out there to pick from. Even areas in regions of the sub-regions have their own variations of the same style (what a mouthful).

Who cares which sauce is the best? You do... right? (Say right.) OK, then....the best BBQ sauce recipe is the one that is your favorite. The best way to find that out is to make it yourself. So, let's get started. BBQ sauces have combinations of sweet, sour, spicy, and tangy ingredients. The primary ingredients for most styles of sauce are tomato (sauce, paste, or ketchup), vinegar, spices and sweetness, or combinations of these.

The Memphis style of BBQ sauce is a good place to start, since it has a moderate balance of sweet, sour, spicy, and tang. Here is a basic...

Memphis style BBQ sauce

4 Tbs butter

1/4 c chopped onion

1 c tomato sauce

1 c vinegar

1/4 c Worcestershire sauce

1 Tbs brown sugar

1 tsp salt

1/2 tsp black pepper

1/8 tsp cayenne pepper

Dash Tabasco sauce

Sauté the onion in butter, then add the remaining ingredients. Heat the mixture until it thickens (15 to 20 minutes).

Any of the ingredients can be changed, added or deleted. A BBQ sauce can be as simple as tomato sauce and Worcestershire, or even vinegar and pepper flakes. But you can also make it as complex as you like, too. You could even use salsa as a base ingredient.

Notice, in the above recipe, that tomato sauce and vinegar are of equal amounts. These are the two prime ingredients that will determine a basic style. As the ratio of these ingredients change, so does the location of where it is made.

Kansas City style sauce is thick, sticky and sweet. To change the above recipe to a KC style, try reducing the vinegar to 1/4 cup and replace the Worcestershire with dark molasses. Add a few select seasonings like paprika, chili powder, and allspice (maybe a touch of cinnamon).

To go the other direction from Memphis, change the tomato sauce to 1/2 cup of ketchup and add some garlic, cloves and 1 cup of water. Increase the brown sugar to 1/2 cup. This will result in a thinner BBQ sauce similar to that used in North Carolina. A Texas style sauce would mean to decrease the vinegar to 1/2 cup and add 1 1/2 cups of water. Add some additional celery, garlic, paprika, and (of course) chili powder.

This may sound like a lot of work, but it is also a lot of fun, too. It's really, though, the best way for you to answer that question, "what is the best BBQ sauce recipe?". And you don't have to start with this recipe, either. There are many, many, many of them available in cookbooks and online. Find one that is close to what you want (thick, thin, sweet, spice, etc.), get yourself another drink, and go to town.

There may be no such thing as the best, but this is a way you can find your favorite. And by the way, you will know it when you find it.

Break Out the Grill! Great Barbecue Recipe Ideas

When summer comes, being inside feels like some sort of sin. If you're a church-goer, it might not be a sin you'll mention come Sunday, but it sure feels like you're doing something wrong. You should be outside, manning the barbecue with a drink in one hand, a spatula in the other, and the sun on your face. Sounds like summer, right?

Just being in the sun outside by the grill is great. But, really, what's the point of grilling if you don't get that wonderful barbecue flavor? Without a really great barbecue recipe or three, you're just... having a picnic with hot food. You're not having a great barbecue! Want help choosing the tastiest, most impressive barbeque recipe? Read on.

Recipes for Barbecue Marinades

Especially since you want to be sure to fully cook meats like chicken and pork on the grill, they have a tendency to dry out. A marinade is a popular way to add flavor and moisture to barbecue meats. Want your marinade to tenderize, too? Look for one with a nice balance of acid and salt.

Keep in mind, however, that marinades aren't a traditionally used type of barbecue recipe. They can taste great, but they sometimes have a tendency to make your meat a little soggy. If you want to get the flavor and tenderizing properties of a marinade while keeping your BBQ traditional, try a BBQ rub.

Recipes for Barbecue Rubs

While you might think BBQ sauce is the most important kind of barbecue recipe, the truth is... it's all in the rub. In fact, a lot of traditional American barbecue doesn't use any sauce at all. Instead, they just use a thick coating of a super-flavorful BBQ spice rub, and cook the meat slowly over an open flame.

A spice rub makes all the difference, so don't leave it out. Especially since it takes approximately six micro-seconds to mix and apply a BBQ rub to your meat. Look for one with a nice balance of salts and sugars, and plenty of spice.

Recipes for Barbecue Sauce

Now we're getting to the fun part. The sauce. Barbecue is popular all over the world, and there are so many types of barbecue sauce just in America alone that knowing what to try can be hard! We all have different tastes, and there's a barbecue recipe out there for any type of BBQ sauce you could dream up.

One of the most popular kinds of BBQ sauce is vinegar-based. Vinegar-based sauces are thin and sharply-flavored, and don't contain the heavy tomato sauce or ketchup you find in other types of barbecue sauce. A vinegar-based barbecue recipe is good on pork, especially with pulled pork sandwiches.

If you're looking to make chicken or turkey on the BBQ grill, you might want to think about trying a white barbecue sauce. White BBQ sauces are made with mayonnaise instead of ketchup, and are creamy, tangy, a touch spicy, and wonderful with poultry.

There are so many great barbecue sauces... without trying them all, you just can't know what you like best. So be sure to try thick, sweet Kansas City barbecue sauce, a spicy Texas barbecue recipe or two, some sweet-and-tangy Memphis BBQ sauce, and... you get the idea.

Fortunately, testing out new recipes is the fun part!

Easy BBQ Ribs Recipe

The summer is a perfect BBQ time across the US. BBQ is a great crowd pleaser and is sure to bring the family together. Here is an easy BBQ ribs recipe and some quick tips to make sure your BBQ experience is safe and fun.

First, to keep things safe:

1. Defrost meat before cooking so you get even cooking and do it in the fridge.

2. Marinate food in the refrigerator and don't reuse the marinade unless you boil it first

3. Do not serve cooked meat in the same plate you had the raw meat (unless you clean it before re-using it)

4. Don't bring out the meat until you are ready to cook to avoid leaving it a prolonged time in hot temperatures before cooking.

Make sure you follow the safety tips and you will have more fun during the summer cookouts. My summer is going great. BBQ's are a big reason for that. One of my favorite dishes is an easy BBQ Ribs recipe. To make great ribs easily we need to follow these tips:

1. Marinade the meat or rub in the seasonings at least 1 hr before cooking more is better but if it's done too long, unless it's a tough cut, you could overpower the meat. Anywhere from one to six hours is good enough.

2. Grill ribs bone side down until the bones start to separate from the meat without turning. This is a key point that helps produce tender ribs.

3. Brush BBQ sauce or any sauce that has sugar only at the tail end of cooking.

4. Allow the ribs to sit for 10 minutes before eating or cutting this helps the meat stay juicy.

5. Use tongs to handle the meat forks will pierce the meat and allow the juices to escape. Piercing the meat reduces the flavor and moisture of the meat.

You can try this tips this weekend or the next time you grill ribs and you will see and taste the difference. In order to do that you need this simple recipe that's great tasting:

6 pounds pork spareribs

1 tblsp red pepper flakes

2 tblsp Adobo or Seasoned Salt

1 tsp fresh ground black pepper ( use less to taste if using adobo)

A barbecue sauce you like

Combine red pepper flakes, Adobo and black pepper. Rub mixture all over ribs; cover ribs and marinate in refrigerator at least 2 hours. Grill ribs over low heat, bone side down until the meat separates from the bone, approximately 1 hour. Apply your favorite barbecue sauce and cook for another 15 to 30 minutes turning the ribs frequently to avoid burning the sauce. Serves 6 to 8.

There you have it an easy BBQ ribs recipe and some tips to make sure you wow your family and guests.

BBQ Recipe - Preparing Your Delicious Marinades

Will you be questioning why some barbecues taste really great whilst others do not? The secret of a excellent BBQ recipe is truly from the marinade and top quality of the pork. Know this, even if you have a really very good BBQ recipe but your meat is not of high good quality and the ingredients that you just use inside your marinades are not actually fine, your barbeque will not actually taste so delicious. Often remember that a good BBQ recipe is just your guide and in the event you do not have the proper components to go with your BBQ recipe, you can't really hope to cook a very good barbeque.

There are numerous BBQ recipes that consist of very good marinades. Check your BBQ recipe and discover out if it offers some excellent marinades. If your BBQ recipe does not include very good marinades, discover some recipes for marinade on-line or merely concoct one on your personal. Creating marinades just isn't definitely so hard if you know the basic substances that you will need to use. On other hand, you are not truly so keep on making your personal marinades; you can just drop by at your favorite grocery store and purchase one of those bottled marinades. Yes, those bottled marinades are not exactly as fine as homemade marinades but they're really extremely convenient to make use of.

Now, if you insist on producing your own marinades, you'll need to have the suitable materials. A fine marinade is made up of several components and it is generally it a liquid form. Common substances for marinades are oil, acid and spices. The acid inside marinade is utilized to break down the meat and make it tender. You can find several acids that you just can use to tenderize the meat. Some these acid based liquids are vinegar, wine, beer, milk and some fruit juices. If you wish to use fruit juice as your acid base, try some pineapple juice or orange juice.

The oil inside marinade keeps the meat from drying out during grilling. Peanut oil, vegetable oil, corn oil and olive oil are commonly utilised for marinades. No, you need to never use butter or bacon drippings inside your marinade. These sorts of oil coagulate when cold. To give your barbecue a distinctive taste, add spices into your marinade. For instance, if you wish to add some Mexican hot and spicy tinge into your barbecue add some pepper into your BBQ recipe.

Early style of generating BBQ recipes weren't complicated. Any of these meats were put on a little stake and cooked above fire until it was ready to get eaten. A BBQ shrimp recipe didn't exist as a form of cooking till culinary schools started to bring cooking into an artistic level of study.

All throughout the world, the form of BBQ shrimp recipe had unique styles in terms of style, time, approach, and spices employed. The manner of cooking a BBQ shrimp recipe very first of all depended on the size of shrimp that was accessible in a locality. Bigger shrimps with tougher shells and meat had to be sliced into smaller and easier to cook portions. It also depended on the species of shrimp that was being cooked.

To the common tongue, one may well say that a BBQ shrimp recipe differed only in the spices applied, but even the diverse species of shrimp have slightly tang to their meat, specifically when cooked using the accessible spices. Reactions while using meat, absorption of flavors as well as the aspect of fire changing their composition create a new orchestra of complex flavors, much towards the delight of foods enthusiasts.

An additional aspect for being considered has for being the spice. Spices dictate the character of a BBQ shrimp recipe. Of course anyone could just cook shrimp above fire, but the art of producing a good BBQ shrimp recipe had to be using the play of spices, one above yet another, like a symphony of musical instruments complementing each other.

Too a great deal from one spice may possibly overshadow the rest, leaving the recipe in a bland monotonous taste. The ideal BBQ shrimp recipe is not determined by any of these factors, but by the individual preferences of every person savoring the splendidly unique taste of this fine crustacean on a stick more than fire.

BBQ Recipe

We all love BBQs, except when the person that is doing the cooking does not have a clue. Apologies to anyone reading this that is about to make a fool of themselves on their first BBQ for friends and family. With a bit of luck, if that person could be you, it can be prevented from happening just by reading this.

Let me start this by saying that when I first started, I was that Numpty. All fired up, me I mean, and let's get going! Lit the fire, meat on, disaster. OMG! Just what did go wrong? I know now, I didn't even think of it then.

To avoid the embarrassment of blackened meat, as opposed to overcooked meat, you need first to know the basic principles of cooking on a BBQ. Bear in mind, your guests are just that, your guests. They don't want to embarrass you so will tend to grin and think of better times. Be prepared for lots of waste. It would be a very good friend indeed that decided to 'Beard the Lion', and put you right, particularly after a few glasses of wine or beer. You need to know two things particularly. You need to know how to do the cooking and you need a basic BBQ recipe.

First things first. If you are using an open BBQ please make sure that the cooking rack has adjustable height when cooking, otherwise you risk the kiss of death and worse. Salmonella is available on your BBQ recipe free of charge if you serve blackened chicken that is raw inside.

Okay, first things first as we said earlier. Get yourself a barbecue, the BBQ recipe can wait. It can be solid fuel or gas, your choice. Bear in mind that the cooking rack MUST be adjustable.

Light the barbeque, and wait! In the case of a gas BBQ wait until it is completely smoke free. If the BBQ is new put it on max for at least 15 minutes before turning it down and starting to cook, then follow the instructions as if it were a solid fuel cooker. Instructions for solid fuel follow.

Whatever you are using to light the BBQ, be it liquid or solid, it MUST be totally burned off. Many lighting media are paraffin based, and unless it is completely burned off everyone will taste it in their food. Do yourself a favour. Do not overload the fuel tray and wait until it has stopped smoking and the coals have gone grey. This is vital. It is also why the adjustable cooking surface is so important. Remember that the coals are extremely hot, and this is good. You can use the heat to sear the meat or vegetables, and then lift the food on the adjustable cooking surface so that it can cook internally to an acceptable temperature.

I must admit that I don't use one but an internal temperature prod is the safest way to serve BBQ'd food. 70 degrees centigrade (internal) is generally considered safe for Chicken, Pork and processed foods. Many people would prefer Beef and Lamb pink in the middle. Cook these meats slowly, after searing, higher on the BBQ, to raise the temperature internally. Health and safety is an issue in the West, so do be careful.

I want to put an absolute exception into the 'pink meat' argument, and watch this. Please be very careful with fish. My broad point is this. Do make sure that ANY fish that you BBQ falls off the bone when cooked. It does NOT need to be cremated, just make sure that the meat drops off the bone with a fork, so again, cook it slowly, but make sure that it does fall off the bone with a fork. It has become accepted by many that Salmon and Tuna can be served pink. Don't be fooled by other peoples ignorance. To safely serve Salmon and Tuna pink it MUST have been frozen previously. The idea is to give your guests what they want and enjoy, not a nasty little surprise!
