BBQ Baking - Dairy Free Banana Chocolate Chip Muffins Baked on the Back Yard Grill


Did somebody say BBQ Bread or Banana Chocolate Chip Muffins on the Grill? Yes, I had a little extra time on my hands this weekend, so I decided to experiment with our new grill. I learned something very interesting. It is very possible to bake loaves of bread, Irish Soda Bread, Donuts, and even my favorite Banana Chocolate Chip Muffins on the BBQ in our backyard. I was amazed at how easy it was too.

Historically speaking, the Spanish Basque sheep herders are well known to us Dutch Oven chefs for their wonderful 'out on the range' sour dough breads. Since I would need a permit to dig a pit in my backyard, fill it with hot coals, and bake my bread in a dutch oven covered with earth and hot coals, I decided to go a more simple route and just try baking bread in my BBQ.

Many new grills, including ours, has a temperature gauge so the trick is to simply get the temperature steady at 350 Degrees and you are set. I discovered that our Kenmore 4 burner grill sets at 350 Degrees when every other burner is on and set at just above Low. Once the temp is stabilized at 350, you can cook just about anything. This comes in real handy since we seem to experience a lot of power outages here in Denver due to our local Power company's consistent inability to provide enough power supply during the hot summer high demand months. Imagine having just kneaded your bread dough only to discover a sudden power outage that will stop baking production for 3 or 4 hours. With my new BBQ Bread discovery, power outages will no longer stop determined bakers like myself from making all those yummy dairy free baked goods for my family.

Here is a wonderful BBQ Baked Dairy Free Banana Chocolate Chip Muffin Recipe that can be made on the back yard BBQ or even at the campground:

Dairy Free Banana Chocolate Chip Muffins cooked on the BBQ

Ingredients:


3 Extra Ripe Banana's (approx. 1 1/2 cups)
2 Eggs
1 C Brown Sugar - Firmly Packed
1/2 C Vegan (100% vegetable solids) Butter
1 tsp Vanilla
2 1/4 C Flour
2 tsp Baking Powder
1/2 tsp Ground Cinnamon
1/2 tsp Salt
1 C Vegan Chocolate Chips (I use the 365 Brand from Whole Foods which are Dairy and Gluten Free)
1/2 C Walnuts or Pecans (chopped) *Optional

Preheat BBQ/Grill to 350 degrees. Mash bananas. In a medium bowl, beat mashed bananas, eggs, sugar, butter and vanilla until well blended. In a large bowl, sift together flour, baking powder, cinnamon and salt. Stir in chocolate chips and nuts. Add banana mixture and mix until just blended. Spoon batter into paper muffin cups (this recipe works great for regular and mini-muffin sizes). Bake 25 to 30 minutes (testing with a toothpick to see if muffins are cooked through. Carefully remove pan from BBQ. Makes approx. 12 regular sized muffins, and 15 mini-muffins.
